Make cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
Reduce heat to low. Add cheddar, Gruyère, and Parmesan cheeses, stirring until melted and smooth. Season with salt, pepper, and nutmeg.
Combine pasta and cheese sauce: Add cooked pasta to the cheese sauce and stir to coat evenly.
Transfer to baking dish: Pour the mac and cheese into a greased baking dish. Sprinkle with crumbled prosciutto and garlic breadcrumbs.
Bake for 20-25 minutes, or until golden brown and bubbly.

It was good. The cheese sauce was rich, but I found the dish a little heavy. Perhaps a bit more pasta to balance the sauce? The prosciutto and breadcrumbs were a nice touch.
Great recipe. I added a pinch of nutmeg to the cheese sauce, which I think enhanced the flavor. The breadcrumbs were perfectly golden and crunchy.
A really delicious and sophisticated take on mac and cheese. The different cheeses created a complex and satisfying flavor profile. I will definitely be making this again.
This recipe is excellent. The only thing I might change next time is to use a slightly different type of bread for the breadcrumbs; the flavor was a little too strong for my preference, but otherwise, it was fantastic.
