Make cheese sauce: In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
Reduce heat to low. Add cheddar, Gruyère, and Parmesan cheeses, stirring until melted and smooth. Season with salt, pepper, and nutmeg.
Combine pasta and cheese sauce: Add cooked pasta to the cheese sauce and stir to coat evenly.
Transfer to baking dish: Pour the mac and cheese into a greased baking dish. Sprinkle with crumbled prosciutto and garlic breadcrumbs.
Bake for 20-25 minutes, or until golden brown and bubbly.

I found the cheese sauce a bit bland, even with the different cheeses. I might have overcooked the pasta. The prosciutto and breadcrumbs were tasty though.
