Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large skillet, heat olive oil over medium heat. Add onions and garlic and cook until softened, about 5 minutes. Add bell peppers, zucchini, and carrots and cook until slightly tender, about 8 minutes.
Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
In a medium bowl, combine ricotta cheese, egg, parsley, salt, and pepper.
Spread a thin layer of tomato sauce in the bottom of the prepared baking dish. Layer with lasagna noodles, ricotta mixture, vegetable mixture, and mozzarella cheese. Repeat layers, ending with a layer of tomato sauce and mozzarella cheese.
Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Let stand for 10-15 minutes before cutting and serving.
I found the lasagna a little too watery, even after letting it rest. The vegetables didn't seem to cook down enough. The flavour was decent, but the texture wasn't great. I might try a different recipe next time.
This recipe is a great base for a delicious vegetarian lasagna! I added some mushrooms and spinach, and it was fantastic. I might experiment with different cheeses next time.
This lasagna is absolutely amazing! So easy to make, and the taste is incredible. I made it for a dinner party, and everyone loved it. I will definitely be making this again and again!
Very good lasagna. I appreciated the simplicity of the recipe, and the use of common ingredients. Next time I will try using a combination of mozzarella and parmesan on top, as suggested.
This is the best vegetarian lasagna recipe I've ever tried! The instructions are clear, and the result is amazing. I followed the recipe exactly, and it was perfect. The resting time really does make a difference!
