Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large skillet, heat olive oil over medium heat. Add onions and garlic and cook until softened, about 5 minutes. Add bell peppers, zucchini, and carrots and cook until slightly tender, about 8 minutes.
Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
In a medium bowl, combine ricotta cheese, egg, parsley, salt, and pepper.
Spread a thin layer of tomato sauce in the bottom of the prepared baking dish. Layer with lasagna noodles, ricotta mixture, vegetable mixture, and mozzarella cheese. Repeat layers, ending with a layer of tomato sauce and mozzarella cheese.
Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Let stand for 10-15 minutes before cutting and serving.
This recipe is a keeper! The layers were perfectly balanced, and the lasagna was moist and flavorful. The instructions are clear and easy to follow, and the result is a delicious and satisfying meal.
I followed the recipe exactly, but the lasagna turned out dry. I think the baking time was too long. The flavor was bland. I won't be making this one again.
This vegetarian lasagna is a true winner! The flavors blend beautifully, and the texture is perfect. It's a crowd-pleaser, and I've made it several times now. Highly recommend!
Great recipe, I loved the flexibility to customize the vegetables. I tried zucchini this time, and it added a lovely texture. The lasagna was a little time-consuming, but definitely worth the effort.
Really enjoyed this. I used a variety of colorful peppers which made the lasagna look very appealing. I also added a pinch of red pepper flakes for a little kick. Will definitely make again.
