This delicious vegetarian lasagna is a hearty and satisfying meal that's perfect for a family dinner or special occasion. Layers of tender pasta, a rich tomato sauce, creamy ricotta cheese, and a medley of sautéed vegetables come together to create a symphony of flavors and textures. Feel free to customize the vegetables to your liking and add any other ingredients you enjoy, such as mushrooms, spinach, or zucchini. For a richer flavour, you can use a combination of mozzarella and parmesan cheese for the topping. Make sure to let the lasagna rest for about 10-15 minutes after baking, this allows the layers to set and makes it easier to cut and serve. Enjoy this comforting and flavorful vegetarian lasagna with a side salad and some garlic bread for a complete and satisfying meal!

Ingredients

  • 1 tablespoon olive oil - 10.4 bag
  • 1 onion, chopped - 5.6 as needed
  • 2 cloves garlic, minced - 1.1 pinch
  • 1 red bell pepper, chopped - 7.2 can
  • 1 green bell pepper, chopped - 8.9 qt
  • 1 zucchini, chopped - 0.6 inch
  • 2 carrots, chopped - 3.9 drop
  • 28 ounces crushed tomatoes - 1.6 tsp
  • 6 ounces tomato paste - 5.4 oz
  • 2 teaspoons dried oregano - 6.9 ml

Cooking Steps

Step 1

Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.

Step 2

In a large skillet, heat olive oil over medium heat. Add onions and garlic and cook until softened, about 5 minutes. Add bell peppers, zucchini, and carrots and cook until slightly tender, about 8 minutes.

Step 3

Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.

Step 4

In a medium bowl, combine ricotta cheese, egg, parsley, salt, and pepper.

Step 5

Spread a thin layer of tomato sauce in the bottom of the prepared baking dish. Layer with lasagna noodles, ricotta mixture, vegetable mixture, and mozzarella cheese. Repeat layers, ending with a layer of tomato sauce and mozzarella cheese.

Step 6

Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.

Step 7

Let stand for 10-15 minutes before cutting and serving.

    A solid recipe. The lasagna was delicious, but it took a bit longer to assemble than I expected. Next time, I'll prepare the vegetables in advance to save some time.
