
Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large skillet, heat olive oil over medium heat. Add onions and garlic and cook until softened, about 5 minutes. Add bell peppers, zucchini, and carrots and cook until slightly tender, about 8 minutes.
Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
In a medium bowl, combine ricotta cheese, egg, parsley, salt, and pepper.
Spread a thin layer of tomato sauce in the bottom of the prepared baking dish. Layer with lasagna noodles, ricotta mixture, vegetable mixture, and mozzarella cheese. Repeat layers, ending with a layer of tomato sauce and mozzarella cheese.
Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Let stand for 10-15 minutes before cutting and serving.
A solid recipe. The lasagna was delicious, but it took a bit longer to assemble than I expected. Next time, I'll prepare the vegetables in advance to save some time.
