Preheat oven to 375°F (190°C). Lightly grease a 9x13 inch baking dish.
In a large skillet, heat olive oil over medium heat. Add onions and garlic and cook until softened, about 5 minutes. Add bell peppers, zucchini, and carrots and cook until slightly tender, about 8 minutes.
Stir in the crushed tomatoes, tomato paste, oregano, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes, stirring occasionally.
In a medium bowl, combine ricotta cheese, egg, parsley, salt, and pepper.
Spread a thin layer of tomato sauce in the bottom of the prepared baking dish. Layer with lasagna noodles, ricotta mixture, vegetable mixture, and mozzarella cheese. Repeat layers, ending with a layer of tomato sauce and mozzarella cheese.
Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Let stand for 10-15 minutes before cutting and serving.
It was alright. The lasagna was a little too cheesy for my liking, and I would have preferred more vegetables. I might try adjusting the cheese-to-vegetable ratio next time.
Great recipe! I added some spinach and mushrooms, and it turned out fantastic. The ricotta cheese layer was creamy and the tomato sauce was rich. Only suggestion: maybe a bit more seasoning in the vegetables.
Excellent recipe! Easy to follow and the lasagna was a hit with the whole family. The combination of flavors was perfect. Highly recommend!
