Prepare the noodles: If using dried wide rice noodles, soak them in warm water for 15-20 minutes until softened. Drain well and set aside.
Prepare the ingredients: Cut the Chinese broccoli into bite-sized pieces. Mince the garlic. Beat the eggs lightly with a pinch of salt and pepper.
Make the sauce: In a small bowl, combine soy sauce, sweet soy sauce, oyster sauce, and sugar. Mix well and set aside.
Cook the egg: Heat a wok or large skillet over medium-high heat. Add vegetable oil. Pour in the beaten eggs and cook, scrambling until just set. Remove from the wok and set aside.
Stir-fry the broccoli and garlic: Add more vegetable oil to the wok. Add the minced garlic and stir-fry until fragrant. Add the Chinese broccoli and stir-fry until it turns bright green and slightly tender, about 2-3 minutes.
Add noodles and sauce: Add the softened rice noodles to the wok. Pour the sauce over the noodles and stir-fry, tossing to coat the noodles evenly. Cook for about 3-4 minutes, until the noodles are heated through and slightly caramelized.
Combine and serve: Return the cooked egg to the wok. Stir-fry everything together for another minute. Serve immediately, garnished with ground peanuts and white pepper, if desired.
It was good, but a bit bland. I think I needed to adjust the sauce to my taste. The noodles were cooked well and the Chinese broccoli was great. Next time, I'll experiment with more seasoning.
This recipe is quick, easy and very tasty. I added chicken, and it was a complete meal in under 30 minutes. The sauce was delicious. I will make this again. Maybe add some chili flakes next time.
Really enjoyed this recipe. It was easy to follow and the flavors were authentic. I added some tofu and it was a great weeknight meal. Next time, I might add a bit more sweet soy sauce for extra flavor.
