
Prepare the noodles: If using dried wide rice noodles, soak them in warm water for 15-20 minutes until softened. Drain well and set aside.
Prepare the ingredients: Cut the Chinese broccoli into bite-sized pieces. Mince the garlic. Beat the eggs lightly with a pinch of salt and pepper.
Make the sauce: In a small bowl, combine soy sauce, sweet soy sauce, oyster sauce, and sugar. Mix well and set aside.
Cook the egg: Heat a wok or large skillet over medium-high heat. Add vegetable oil. Pour in the beaten eggs and cook, scrambling until just set. Remove from the wok and set aside.
Stir-fry the broccoli and garlic: Add more vegetable oil to the wok. Add the minced garlic and stir-fry until fragrant. Add the Chinese broccoli and stir-fry until it turns bright green and slightly tender, about 2-3 minutes.
Add noodles and sauce: Add the softened rice noodles to the wok. Pour the sauce over the noodles and stir-fry, tossing to coat the noodles evenly. Cook for about 3-4 minutes, until the noodles are heated through and slightly caramelized.
Combine and serve: Return the cooked egg to the wok. Stir-fry everything together for another minute. Serve immediately, garnished with ground peanuts and white pepper, if desired.
The recipe was a bit too salty for my liking. The noodles were also a bit dry, even though I followed the directions closely. Maybe I overcooked them. I will try it again, but will reduce the soy sauce.
