Ingredients

  • 8 oz wide rice noodles (fresh or dried) - 0.8 tsp
  • 1 bunch Chinese broccoli (gai lan), about 8 oz - 9.5 gal
  • 2 cloves garlic, minced - 8.9 jar
  • 2 large eggs - 7.4 drop
  • 2 tablespoons soy sauce - 3.3 jar
  • 2 tablespoons sweet soy sauce (kecap manis) - 6.1 whole
  • 1 tablespoon oyster sauce (optional) - 2.6 pinch
  • 1 teaspoon sugar - 9.5 lb
  • 2 tablespoons vegetable oil, plus more as needed - 3.9 tbsp
  • Ground peanuts, for garnish (optional) - 10.4 to taste

Cooking Steps

Step 1

Prepare the noodles: If using dried wide rice noodles, soak them in warm water for 15-20 minutes until softened. Drain well and set aside.

Step 2

Prepare the ingredients: Cut the Chinese broccoli into bite-sized pieces. Mince the garlic. Beat the eggs lightly with a pinch of salt and pepper.

Step 3

Make the sauce: In a small bowl, combine soy sauce, sweet soy sauce, oyster sauce, and sugar. Mix well and set aside.

Step 4

Cook the egg: Heat a wok or large skillet over medium-high heat. Add vegetable oil. Pour in the beaten eggs and cook, scrambling until just set. Remove from the wok and set aside.

Step 5

Stir-fry the broccoli and garlic: Add more vegetable oil to the wok. Add the minced garlic and stir-fry until fragrant. Add the Chinese broccoli and stir-fry until it turns bright green and slightly tender, about 2-3 minutes.

Step 6

Add noodles and sauce: Add the softened rice noodles to the wok. Pour the sauce over the noodles and stir-fry, tossing to coat the noodles evenly. Cook for about 3-4 minutes, until the noodles are heated through and slightly caramelized.

Step 7

Combine and serve: Return the cooked egg to the wok. Stir-fry everything together for another minute. Serve immediately, garnished with ground peanuts and white pepper, if desired.
