Prepare the noodles: If using dried wide rice noodles, soak them in warm water for 15-20 minutes until softened. Drain well and set aside.
Prepare the ingredients: Cut the Chinese broccoli into bite-sized pieces. Mince the garlic. Beat the eggs lightly with a pinch of salt and pepper.
Make the sauce: In a small bowl, combine soy sauce, sweet soy sauce, oyster sauce, and sugar. Mix well and set aside.
Cook the egg: Heat a wok or large skillet over medium-high heat. Add vegetable oil. Pour in the beaten eggs and cook, scrambling until just set. Remove from the wok and set aside.
Stir-fry the broccoli and garlic: Add more vegetable oil to the wok. Add the minced garlic and stir-fry until fragrant. Add the Chinese broccoli and stir-fry until it turns bright green and slightly tender, about 2-3 minutes.
Add noodles and sauce: Add the softened rice noodles to the wok. Pour the sauce over the noodles and stir-fry, tossing to coat the noodles evenly. Cook for about 3-4 minutes, until the noodles are heated through and slightly caramelized.
Combine and serve: Return the cooked egg to the wok. Stir-fry everything together for another minute. Serve immediately, garnished with ground peanuts and white pepper, if desired.
Very good and easy to make. I added chicken. The sauce was flavorful and the noodles cooked well. The peanuts really make it extra special!
The dish was okay, but it needed more flavor. The noodles were a little bland. Maybe I should have used more sauce. The overall taste was lacking.
Absolutely delicious! This recipe is a keeper. The instructions were clear, and the result was a restaurant-quality Pad See Ew. I followed the recipe exactly and it was perfect. Highly recommend!
The dish was okay. The noodles stuck together a bit, and the sauce wasn't as flavorful as I hoped. Maybe I needed to use a better quality oyster sauce. The addition of peanuts was a nice touch though.
This recipe is the best! It's quick, easy and very very tasty. Followed the instructions precisely and it tasted exactly as the recipe described! Definitely making this again.
