Pound chicken breasts to an even thickness (about 1/2 inch).
In three separate shallow dishes, place flour, beaten eggs, and breadcrumbs mixed with Parmesan cheese, garlic powder, and Italian seasoning.
Dredge each chicken breast in flour, then dip in egg, and finally coat thoroughly with breadcrumbs.
Heat olive oil in a large skillet over medium-high heat. Sear chicken breasts for 3-4 minutes per side, until golden brown.
Transfer chicken breasts to the prepared baking sheet. Top each with marinara sauce, mozzarella cheese, and a sprinkle of Parmesan cheese.
Bake for 15-20 minutes, or until cheese is melted and bubbly and chicken is cooked through.
Garnish with fresh basil (optional) and serve immediately.
This was a really good chicken parm. The chicken was juicy, and the breading stayed nice and crispy. I would definitely make this again. Next time, I'll try adding some garlic to the breadcrumb mixture.
The chicken was overcooked and dry. The sauce tasted like it was straight out of a jar. I followed the recipe as written, but it didn't turn out well.
