In a large bowl, season the lamb with salt, pepper, cumin, coriander, ginger, turmeric, and saffron. Toss to coat evenly.
Heat olive oil in a large Dutch oven or tagine over medium-high heat. Brown the lamb in batches, then set aside.
Add the onion and garlic to the pot and cook until softened, about 5 minutes. Stir in the cinnamon stick.
Return the lamb to the pot. Add the chicken broth, honey, and apricots. Bring to a simmer.
Cover and cook in a preheated oven at 325°F (160°C) for 2-2.5 hours, or until the lamb is very tender.
Stir in the chopped cilantro and parsley. Adjust seasonings as needed.
Serve hot with couscous or crusty bread.
This recipe is a winner. The slow cooking really makes a difference in the tenderness of the lamb. The sauce was rich and flavorful, and the apricots provided a nice sweetness. I'll definitely make this again.
It was okay. The lamb was a little tough, even after slow cooking. The flavor was good, but I think I might have overcooked it. I'll try it again and adjust the cooking time.
This tagine was fantastic. The cinnamon and ginger really shone through. I added a pinch of cayenne pepper for a little extra heat, which I enjoyed. The apricots were a bit tart, but overall, a very satisfying meal.
Very good! The spices were well-balanced, and the apricots added a nice touch of sweetness. I would definitely make this again. It was a big hit with my family!
Absolutely divine! The combination of sweet and savory is perfect. The lamb melted in my mouth. I followed the recipe exactly, and it was a huge success.
