In a large bowl, season the lamb with salt, pepper, cumin, coriander, ginger, turmeric, and saffron. Toss to coat evenly.
Heat olive oil in a large Dutch oven or tagine over medium-high heat. Brown the lamb in batches, then set aside.
Add the onion and garlic to the pot and cook until softened, about 5 minutes. Stir in the cinnamon stick.
Return the lamb to the pot. Add the chicken broth, honey, and apricots. Bring to a simmer.
Cover and cook in a preheated oven at 325°F (160°C) for 2-2.5 hours, or until the lamb is very tender.
Stir in the chopped cilantro and parsley. Adjust seasonings as needed.
Serve hot with couscous or crusty bread.

My family loved this! The aroma of the spices while it was cooking filled the entire house. The lamb fell apart, and the combination of flavors was just perfect. I served it with couscous as suggested, and it was a perfect pairing.
Absolutely delicious! The lamb was so tender, and the sauce was bursting with flavor. The apricots added a lovely sweetness that perfectly complemented the spices. This recipe is a keeper!
Really enjoyed this recipe. The slow cooking process is key to the tenderness of the lamb. The spices were fragrant and warming. I'll definitely make this again during the colder months.
This tagine is a culinary masterpiece! The flavors are incredibly complex and well-balanced. The lamb was perfectly cooked, and the apricots were a delightful addition. Highly recommend!
