
In a large bowl, season the lamb with salt, pepper, cumin, coriander, ginger, turmeric, and saffron. Toss to coat evenly.
Heat olive oil in a large Dutch oven or tagine over medium-high heat. Brown the lamb in batches, then set aside.
Add the onion and garlic to the pot and cook until softened, about 5 minutes. Stir in the cinnamon stick.
Return the lamb to the pot. Add the chicken broth, honey, and apricots. Bring to a simmer.
Cover and cook in a preheated oven at 325°F (160°C) for 2-2.5 hours, or until the lamb is very tender.
Stir in the chopped cilantro and parsley. Adjust seasonings as needed.
Serve hot with couscous or crusty bread.

The flavor was good, but it took a very long time to cook the lamb. I followed the recipe exactly, so I'm not sure why it took so long to tenderize. Otherwise, it was okay.
Excellent recipe! I especially enjoyed the depth of flavor from the saffron. I didn't have any honey, so I substituted maple syrup, and it still turned out great. A wonderful weeknight dinner!
