
Heat olive oil in a large paella pan over medium heat. Add chicken and chorizo, cook until browned.
Add onions, bell peppers, and garlic, cook until softened. Stir in tomatoes and saffron, cook for 5 minutes.
Add rice and stir to coat with the mixture. Pour in chicken broth and bring to a simmer.
Arrange shrimp, mussels, and clams over the rice. Season with salt and pepper.
Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and seafood is done.
Let it rest for 10 minutes before serving. Garnish with parsley and lemon wedges.
Serve hot and enjoy!
The paella was delicious, however the cooking time may need to be adjusted. I like to make the rice a bit firmer, but overall the flavors were excellent. The chicken was tender, and the seafood was fresh.
A really good recipe! Easy to follow and the end result was fantastic. The seafood and chicken combination was wonderful. I'll make this for my friends. The socarrat was the highlight!
Not my favorite paella. I found the dish a little bland. The rice was a bit undercooked. I think it needs more seasoning and perhaps some tomatoes.
