
Heat olive oil in a large paella pan over medium heat. Add chicken and chorizo, cook until browned.
Add onions, bell peppers, and garlic, cook until softened. Stir in tomatoes and saffron, cook for 5 minutes.
Add rice and stir to coat with the mixture. Pour in chicken broth and bring to a simmer.
Arrange shrimp, mussels, and clams over the rice. Season with salt and pepper.
Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and seafood is done.
Let it rest for 10 minutes before serving. Garnish with parsley and lemon wedges.

This was a very good paella. I added some extra vegetables, and it turned out great. The rice had a wonderful texture, and the seafood was cooked perfectly. Would make it again.
This was a fun recipe to make! The rice was fluffy, and the seafood was fresh. I substituted shrimp for the mussels, and it worked out great. I'd suggest more vegetables, though.
