Heat olive oil in a large paella pan over medium heat. Add chicken and chorizo, cook until browned.
Add onions, bell peppers, and garlic, cook until softened. Stir in tomatoes and saffron, cook for 5 minutes.
Add rice and stir to coat with the mixture. Pour in chicken broth and bring to a simmer.
Arrange shrimp, mussels, and clams over the rice. Season with salt and pepper.
Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and seafood is done.
Let it rest for 10 minutes before serving. Garnish with parsley and lemon wedges.
Serve hot and enjoy!
It was good, but not quite as flavorful as I expected. I think next time I'll use a bit more saffron. The seafood was a little overcooked for my taste, but the rice had a nice texture.
Absolutely phenomenal! The saffron flavor was perfect, and the seafood was cooked to perfection. The socarrat was the highlight – crispy and flavorful. My family loved it. Will definitely make this again.
Absolutely outstanding! This paella is a true masterpiece. The combination of chicken, seafood, and saffron rice is a culinary delight. The socarrat was perfect, and every bite was a joy.
