Heat olive oil in a large paella pan over medium heat. Add chicken and chorizo, cook until browned.
Add onions, bell peppers, and garlic, cook until softened. Stir in tomatoes and saffron, cook for 5 minutes.
Add rice and stir to coat with the mixture. Pour in chicken broth and bring to a simmer.
Arrange shrimp, mussels, and clams over the rice. Season with salt and pepper.
Reduce heat to low, cover, and simmer for 20-25 minutes, or until rice is cooked and seafood is done.
Let it rest for 10 minutes before serving. Garnish with parsley and lemon wedges.
Serve hot and enjoy!
Excellent! The seafood and chicken complemented each other perfectly. I added some chorizo for extra flavor. The socarrat was a bit tricky to get right, but it was worth it.
A very enjoyable paella. The chicken was tender, and the rice was cooked well. I added a bit more salt and pepper to my liking. Overall, a great dish for a weekend dinner.
It was alright. The flavors were good, but the rice was a bit sticky. The seafood was cooked fine. I would add a little more stock next time.
The dish was okay. I'm not sure the chicken and seafood flavors complemented each other perfectly, and I felt like something was missing in terms of herbs and spices. The rice was cooked well, though.
This paella is a winner! The flavors were incredibly balanced, and the presentation was beautiful. The socarrat was perfectly crispy, and the dish was a delight. Highly recommended.
