When my children were little, these cold, spicy noodles served on a big plate, known as jaengban-guksu, were quite popular in Korea. The light sauce poured over top is prepared with garlic, ginger, and vinegar, is sweetened with pear, and is somewhat spicy. My whole family enjoyed this dish, which was mixed with noodles, veggies, and egg pieces and served ice cold. Jaengban-guksu is designed to be shared and eaten all at once, so prepare these noodles quickly and share them with your friends and family. They're simple to prepare and ideal for a summer weeknight supper.

US Customary


8 qty of ounces thin buckwheat noodles (or somyeon)

2 qty of hard boiled eggs, shelled and cut into quarters lengthwise

3 cup of of clean fresh lettuce, torn into bite size pieces (or mixed greens)

1 qty of small tomato, cut into 8 pieces lengthwise

0.5 cup of worth cucumber matchsticks

1 tbsp of toasted sesame oil

1 tsp of toasted sesame seeds

8 qty of ice cubes

1 qty of large Korean pear, peeled, cored, and cut into chunks

0.25 qty of medium onion, cut into chunks

2 tsp of peeled ginger

0.25 cup of hot pepper flakes

2 qty of garlic cloves, minced

1 tbsp of soy sauce

1 tsp of kosher salt

2 tbsp of hot pepper paste

2 tbsp of white (or apple) vinegar
