3 lbs Pork Loin 1 tsp Onion Powder 1 tsp Garlic Powder 1 tsp Smoked Paprika 1 Tbsp Fresh Thyme finally chopped 1 Tbsp Fresh Rosemary finally chopped 2 tsp Salt 1 tsp Cracked Black Pepper 1/3 tsp Scotch Bonnet Pepper (Seeded and Fine Chopped) 1 Tbsp Soy Sauce 2 tbsp Dijon Mustard 2 tbsp Olive Oil In a large steel mixing bowl combine all ingredients except for the Pork Loin and mix well. Add the spice mix and rub over the Pork Loin thoroughly. Pre heat the oven to 350  degrees(180C). Cook pork roast for 1 hour until the center reaches a temperature of 155 F* internally for a medium doneness roast longer if you prefer (based with my rum glazed if you like for the last 10 minutes of cooking) then pull out the roast and cover with foil wrap and let it rest for 10 to 15 minutes. Server and Enjoy KILLER  RUM GLAZED 2 tbsp Olive Oil 3 Cloves Garlic Minced Pinch of salt 1 cup brown sugar 1/2 tesp minced fresh ginger 1/2 cup Appleton dark rum 1 tbsp grace hot sauce In a small sauce pan over medium to low heat add olive oil and garlic. Sauté for about a minute and add all the other ingredients simmer slowly and till glazed thicken slightly.
