Ingredients

1/4 cup of peanut or vegetable oil
2 tbsp of achiote (annatto) seeds
2 tbsp of unsalted butter
1-2 Thai chiles, with seeds, thinly sliced
4 garlic cloves, finely chopped
2 tbsp of fresh calamansi or lime juice
1 tbsp of reduced-sodium soy sauce
1 1/4 lbs of large shrimp, peeled, deveined
1 pinch Kosher salt, freshly ground pepper
2 scallions, thinly sliced
1 Toasted country-style bread (for serving)
