Egg Coffee has the greasy taste of the egg and of course the smell of coffee. You definitely want to try it at warm to enjoy the best taste. Ca Phe Trung originated in Hanoi and Giang Cafe is the oldest coffee shop serving this type of coffee. That’s why their places are always crowded with tourists as well as the locals in Hanoi.

Egg Coffee

Put 15g of coffee powder into the filter, compress it to fit your hand, not too tight. Add 10ml of hot water (to help the coffee expand first, also known as the "wake up" coffee flavor).  Place the coffee filter on the rim of the cup. Then add 60ml of hot water, close the lid and wait for the coffee to extract.

Separate 2 egg yolks into a cup. Add 25ml condensed milk, 5ml honey. Using an electric mixer, turn on the lowest speed and beat in a certain direction for about 4-5 minutes until the egg cream mixture turns bright yellow. When picking up the whisk, the mixture flows downhill.

After the coffee is extracted, take the filter out of the mouth of the cup. Add the whipped cream and use a spatula to slow the melting of the custard.  Sprinkle a little coffee powder on top of the ice cream for a beautiful look. Enjoy while hot!
